Calling All My Gluten-Free and Vegan friends: This One’s For You.

Well, shame on me. From reviews on restaurants to kitchen endeavors, I have tried to give you all creative, healthy, and exciting ways to enjoy making and eating all kinds of food. I have told you about burritos of sushi, and ways to drop the car keys and get in the kitchen. But I have, as it pains me to admit, neglected you, my friends. You, who omit animal products from your diet. You, who have allergies to gluten. This is my confession: my name is Samah Dada and I have forgotten to blog for my audience of gluten-free and vegan friends.
I truly respect the vegans of the world and those who live with celiac or other reasons to omit gluten from their diet. Nutrition and diet is a lifestyle, and many of us seem to forget that there are many people in this world with different gastronomical needs.
So, if you will forgive me, I would like to make amends.
Correction: I would like to make amends. With nutella and peanut butter and a cherry on top. Because I think I might have more success in redeeming myself with sweet treats in my hand.
So…whether you’d like to get in the kitchen and bake these sweet gluten-free or vegan treats, or if you just want to get out of the house and eat at a restaurant, allow me to highlight some of the most delicious vegan and gluten-free treats that sacrifice nothing. Not flavor, not sweetness, and certainly not your undeniable craving for sugar (especially during this lovely finals season).

Think again.Online Healthy Dessert Blogger Chocolate-Covered Katie has a mouth-watering and simply beautiful compilation of healthy as well as special-diet friendly treats.  All of the ingredients Katie uses in her recipes are healthy, clean, and use absolutely no eggs or dairy products. And, what’s more, she has an entire section of her blog dedicated to Gluten-Free, Vegan, Soy-Free, High-Protein, and Sugar-Free recipes. It’s safe to say she has just become our personal food angel.
Let’s get started!

I think I have a better chance of getting struck by lighting than finding someone who dislikes Nutella. So, check out the completely gluten-free and vegan recipe from CCK for Nutella Rice Crispy Treats.
  • 3 cups GF brown rice crispies (95g)
  • 2 1/2 tsp pure vanilla extract (10g)
  • 1/2 tsp salt
  • 1/2 cup plus 2 tbsp chocolate hazelnut spread (145g)
  • 1/2 cup agave or honey (note: strict vegans don’t use honey) (115g)
  • 1/4 cup cocoa powder (or your favorite chocolate protein powder) (20g)
  • optional: melted chocolate for dipping
Recipe: In a large bowl, mix all ingredients except the rice crispies. Melt to a stir-able consistency (either in the microwave or on the stove), then pour over the cereal and stir well, making sure to coat all the rice crispies. Line an 8×8 pan with wax or parchment paper and spread the mixture evenly into the pan. Place a sheet of wax or parchment paper on top, then press down as firmly as you can. Freeze for at least a half hour before slicing, and store the homemade bars in the fridge or freezer. Dip bottoms in melted chocolate if you would like!
All you Girl Scout Cookie Lovers listen up. How does a Samoa Girl Scout Cookie Pie sound?
That’s what I thought.

  • 2 cups unsweetened coconut
  • 4 tablespoons coconut oil, melted
  • 1/2 cup coconut flour
  • 1 tablespoon honey (note: strict vegans can use agave)
  • flesh from 2 ripe avocados
  • 4 – 5 tablespoons honey, to taste (note: strict vegans can use agave)
  • 1/4 cup dark cocoa powder
  • 1 tablespoon Kahlua or strong brewed coffee
  • 2 tablespoons coconut milk
  • pinch of Kosher salt
  • Garnish: melted chocolate chips
Toast coconut in a large skillet over medium heat 5 minutes or until golden; reserve 1/2 cup and set aside.  Combine 1 1/2 cups toasted coconut, melted coconut oil, flour and 1 tablespoon honey in a large bowl; press into and up sides of pie plate. Set aside.  Add avocado, remaining honey, cocoa, Kahlua, coconut milk and salt to bowl of a food processor. Process until completely smooth. Spoon into pie shell and sprinkle with reserved toasted coconut. Freeze at least 4 hours or until firm. Just before serving, drizzle with melted chocolate.
